Beef Caserole

Serves 5

Ingredients

  • 2 Beef stock cubes
  • 1 Vegetable stock cube
  • 1 Large onion
  • 6 Carrots
  • 1 Leek
  • Beef
  • New potatoes

Instructions

  1. Chop the vegetables and heat the oven to gas mark 6. Ensure the potatoes are halved and the onion is diced.
  2. Brown the meat in a little oil.
  3. Put the meat in the bottom of a large casserole dish and heat the vegetable through in the pan with the oil and fat for about five minutes.
  4. Add the vegetables on to the meat. Place the potato on top. Boil about a half pint of water and mix the stock cubes in, now add to the dish making sure to cover the vegetable but leaving the potato uncovered (to steam it).
  5. Cover and cook for about two hours.
  6. Once cooked, drain the liquid into a saucepan and mix in a little more beef stock. Bring to the boil and reduce to thicken the sauce.
  7. Pour over the casserole and serve.
